The over 25 sides would win, just more top-level world-class experience, and likely more of the better players.  Some of the under 25's will however still improve as players. 
Although not sure there is space for the Deysel Twins with their stone hands, a surprise given their father was a Springbok scrumhalf. The Deysel twins used to crash ball at the dinner table when asked to pass the salt.

Shark you clearly have NOT been watching them play for Sale winning MOM frequently Your problem is that you reach a conclusion and ignorantly stick by it. When the du Preez twins started a good few seasons ago yes they dropped the odd ball but that soon changed even at the Sharks Same applies to your take on JVR - they are ignorant and out of touch Fucking move with the times for fuck sake It’s like forever defining Amla as a crap bat for when he started he was crap, but he became brilliant. Your take on players sticks with your original definition never taking into account the fact that players work on their weaknesses and improve

Well, the Sharks back 3 got completely blasted in the press for not being able to tackle and allowing soft tries against the hurricanes. 

This is what I have said for a long time, guys like Mpimpi, Madosh etc, do not like to tackle or get knocked around. They rather go for ankle taps rather than dominating in the tackle

It seems that some have crystal balls here quite frankly.

Both sides are impressive but I would generally give a 26 year top level player the edge over a 22 year star.

It's an interesting question but impossible to prove unless of course it's actually done and generally a good test side has a balance between both.

I would go with that Saffex because when Meyer took over initially he stuck to the tried and experienced and had some success but the players eventually peaked and started going downhill (too many "old toppies") . Then he panicked and started some youngsters and this was too late, Coetzee vacillated and went from bad to worse, couldn't get the balance right and nearly ruined our rugby almost permanently.

When Rassie took over he initiated the balance gradually and as the youngsters started blending in with the more experienced we slowly started on a recovery and until the balance was almost perfect. The results we all know, Champions and WC. The formula is balance, younger players learn from their older team mates who have been there and respect them very much, does not matter who the player is, they look up to him.

They both need each other.

My older side is not that old though as many selected are just over the 25 year mark so in their prime

When Meyer took over he used many Bulls players because he was familiar with them. He even had the useless Dean Greyling and that other numpty as the tighthead. 

His first season was terrible, with very few tries scored. 

Forwards dominated the advantage line and individualistic opportunism by the backs saved his first year from being even worse. 
Meyer is probably not a great example as he had the biggest budget in history to buy any team he wanted at Stade Francais, and he turned it into the Bulls kick and chase plan where he was delighted Morne was in the squad. His own players didn't want to follow the game plan- except Morne who loved the plan.
Stade Francais have since disposed of Meyer and their performances have improved drastically. However, it may still be too late and they could be relegated to the second division. The Billionaire owner must be devasted.
