Denny, I see Bison mince in some of the supermarkets...cheaper than beef...I prepared it the same as normal mince and it tasted similar...the dish was particularly tasty...I don't know if it was due to the bison or if I just got lucky... it's leaner than normal beef mince, but not too lean...the place I bought it specialises in "different" meat...you can buy frog legs and kangaroo there too...but I've seen bison, elk and other venison mince and meat in one or two of the mainstream supermarkets too...and wild hog, which is a pestilence here in Texas.
